A festive event with very strict rules, which a banquet undoubtedly is, requires perfect organization. Therefore, entrust its planning and preparation to the hands of professionals. What is a banquet and what occasions is it suitable for

A banquet is a very formal celebratory banquet held for several people usually to celebrate individuals, honor distinguished guests, company anniversaries, as well as at the conclusion of conventions and other important events. If you are planning a family-friendly birthday party or wedding, a less formal wedding reception or birthday banquet may be more appropriate for you.

It is customary for a banquet to follow a certain dress code, and all guests have their seats marked with name tags, usually at round banquet tables of 10 people, but depending on the total number of guests. Elongated tables or L or U-shaped tables are also common.

Banquet rooms are usually decorated very festively. Banquet tables are usually set with several types of cutlery sets, several types of champagne or aperitif glasses, and often candlesticks or small floral decorations. Banquet chairs are usually covered with decorative covers, but this is not the norm

Types of banquet

There are two types of banquet, which differ only in the form of serving the food. The first is the family style of banquet, which is older but is now being abandoned. It is found in boarding houses or in cheaper restaurants on special occasions. It involves serving food from large silver bowls right at the table. However, today's fast-paced times do not lend themselves well to this lengthy and more elaborate style.

The other form of banquet is plated service, which is much more popular and common. The food is put on the plates already in the kitchen, so the waiters bring out the already filled plates and pass them to the guests. It is also a much more hygienic option, where the only people who come in contact with the food are the cooks. In contrast, with family style, each part of the meal is served to you from a different waiter's bowl.

The banquet menu consists of several courses and at the same time each guest can choose from several different menus in advance. This ensures that everyone - carnivores, vegetarians and vegans, or people with various intolerances - will enjoy themselves. At Chateau Catering, we offer 5 variations of the three-course menu, which can be adapted or varied according to your wishes.

  • Menu 1 - Warm ham off the bone with horseradish, apple, marinated shallots, mustard seed and brioche, strong beef consommé with liver dumplings and seasonal vegetables, sirloin in cream with our bun and cranberries.
  • Menu 2 - Caesar salad with parmesan shavings and bacon crisps, black root cream with 63°C eggs and truffle oil, roast duck breast with carrot puree, marinated radicchio, ponzu sauce, fried onions and coriander.
  • Menu 3 - Duck variation of pate and filleted smoked breast with cranberry reduction, strong beef consommé with liver dumplings and seasonal vegetables, pork tenderloin roasted pink with demi-glace and mashed potatoes with onions.
  • Menu 4 - Duck variation of pate and filleted smoked breast with cranberry reduction, thick beef consommé with liver dumplings and seasonal vegetables, flank steak baked pink with green pepper sauce, mashed potatoes with onions.
  • Menu 5 vegetarian - Caprese salad with basil and balsamic reduction, sugar snap pea cream with buttermilk and parmesan tarhoni risotto with grilled vegetables.

Other variations to change up the banquet menu

We offer many more dishes from which you can build your banquet menu. For your entrée, you can choose a cranberry arugula salad with duck breast or two vegetarian options - cucumber tartare with avocado and tortilla chips or bruschetta with tomato, basil oil and tomato chips.

You can also choose from three soups: kulajda with real porcini mushrooms, fresh dill and quail egg, or creamy young pea soup with carrot chips, or gazpacho with cucumber tartare and goat's cheese foam.

We can also cook five other main courses for you. You can choose from three meat and two vegetarian options. We offer the following dishes:

  • Beef cubes on Smíchov lager with root vegetables and mashed potatoes.
  • Grilled fillet of sea bass with broccoli tarragon and mild béarnaise sauce.
  • Roast beef flap steak with smothered mashed potatoes, marinated shallots and truffle sauce.
  • Vegetarian saffron risotto with parmesan cheese and roasted sunflower seeds.
  • Vegetarian beetroot risotto with goat's cheese, honey walnuts and beetroot chips.

And we haven't forgotten the kids either. We can prepare for them, for example, chicken schnitzel with mashed potatoes. If you still don't have a choice, we can arrange the dishes individually. Just contact us and together we will create a banquet menu tailored to you.

Drinks for a celebratory toast and to quench your thirst

For a festive toast, we can offer you a variety of sparkling wines, prosecco or cinzano bianco. For a non-alcoholic toast, you can try one of our homemade lemonades - citrus, raspberry or cucumber, or classic cola sodas, fruit juices, tonic or sparkling water with lemon.

Our drinks menu also includes white, red and rosé wines on tap, beers and various liqueurs or spirits. Our bartenders can also mix you classic drinks such as mojitos, gin and tonics, aperol spritz or tequila sunrise. Hot teas and coffees are a must.
